Abstract

The mutarotation of α- and β-D-glucose near their melting points has been studied in the neat materials as well as in the presence of water, and at low temperature in the presence of H₃BO₃ and NaHCO₃. The process of mutarotation was found to become very fast as soon as the bulk of the material melted.
